If you are new to living with Celiac Disease, this soup is a perfect comfort food that will do wonders for your body. This nourishing meal is also an excellent meal to enjoy after accidentally consuming gluten or anytime you feel unwell or rundown.
The following recipe can be adjusted to your liking by simply adding any extra vegetables that you enjoy.

Pre-heat Fan Forced Oven to 180 Degrees (350F)

90 minutes
Serves:
4 people
Ingredients:
1 Litre Chicken Stock (ensure gluten free) 1 Whole Roasting Chicken 1 Packet Rice Noodles Bunch Bok Choy 2 Spring Onions Soy Sauce (ensure gluten free)
To make:
Roast Chicken in oven for approx 90 mins
Slowly simmer Chicken Stock
Remove breast from Chicken and slice into pieces
Cut Bok Choy in to pieces
Prepare Rice Noodles according to packet instructions then drain and rinse in cold water
Place Chicken, Bok Choy and Rice Noodles in a shallow bowl.
Ladel Chicken Stock into bowl
Pour Soy Sauce to your liking over the Chicken, Bok Choy, Rice Noodles and Stock
Finely slice Spring Onions and sprinkle over the soup
Enjoy!
Notes:
This recipe can be frozen without the noodles. Add cooked noodles to the soup after defrosting and reheating to avoid them falling apart.
