Gluten Free Pad Thai

Some of the take away foods that I can buy I much rather just make myself 😆 Anyone else like that?


It‘s usually just as quick to make a big batch of Pad Thai as it is to order a take away serve, pick it up and get it home…. Not to mention I can put whatever takes my fancy in it and keep it healthy and of course 100% gluten free and safe.

This is one of those meals that’s great for a simple meal when you really can’t be bothered cooking as it’s so quick and easy to make.

You Will Need


1 Tbsp olive oil

200g Rice Noodles, cooked and drained

500 grams diced Chicken Breast or Prawns

1 Jar Pad Thai Paste

1 Tbsp Fish Sauce

1 Tbsp Coconut Sugar

2 Eggs

2 Carrots, thinly sliced

1 Red Capsicum / Bell Pepper, thinly sliced

2 stems of Spring Onions, thinly sliced

Bean Sprouts

1/2 Cup Peanuts, chopped

Juice of 1 fresh Lemon

Wedges of Lemon to serve

To Make


Heat oil in a large pan

Fry chicken or prawns until cooked

Stir in Pad Thai Paste, Fish Sauce and Coconut Sugar

Push to one side of the pan, adding oil to the pan

Cook egg in pan and stir through, along with the noodles, carrot and capsicum

Stir until heated through. Serve in large bowls, topped with bean sprouts and peanuts

Lemon wedges can be served with Pad Thai to be added to taste
