This is an excellent meal to enjoy after a workout, helping your muscle recovery and growth.
It is packed with flavor and can be eaten warm or cold.
You will need
Lettuce or Baby Spinach Leaves
Half a Broccoli, cut in to florets (also include stem thinly sliced)
Half a Leek, thinly sliced
Clove Garlic, crushed
2 Tbs Hemp Seeds or Pumpkin Seeds
3 Eggs, hard boiled, peeled and quartered
1 Chicken Breast
1 Tbs Olive Oil
Balsamic Vinegar
To Make
Slice the Chicken Breast in half and lightly fry in a pan with half the oil (if you prefer to crumb your chicken, you can also do so using gluten free breadcrumbs)
Heat the remaining oil in another pan
Stir Broccoli, Garlic and Leek in the pan until lightly cooked (Broccoli is best in this recipe when it still has a bit of crunch)
In a bowl, place a bed of Lettuce or Baby Spinach Leaves
Place Broccoli, mix on top with Eggs, Seeds and Chicken
Drizzle Balsamic Vinegar over top and enjoy
